Forget all the tomato-y shakshuka you see on Instagram. The traditional Turkish version is something completely different. It’s more down to earth. The upper part of the eggplant is heavier. Not only is it sour, but it also has a bittersweet chili pepper taste. A handy guide to making shakshuka with eggplant and peppers without wasting time on a hot stove.
The secret lies in the ratio of the ingredients. You want the right balance between sweet, spicy and salty depth. If you leave out the bitter chili pepper, the soul of the dish disappears.

- Two big pieces : Choose the hard ones. Hollows absorb too much oil.
- Green pepper 300 g : Dolmark Biver. It gives richness and sweetness.
- Spicy Pepper 100g : Ashishvri Bivar. Don’t skip these. It really brings out the richness of the eggplant.
- 1 egg : Add at the end. This is why it is called “shakshuka” in some interpretations, but the tomato base here is smaller compared to its North African counterpart.
- Tomato 500 g : Purified into pulp.
- 1 tsp olive oil : For frying. Quality is key here.
Process
Let’s start with chili peppers. Cut the paprika and cayenne into small cubes. This ensures even heating.
Heat the olive oil in a medium saucepan. I want it to shine, not smoke. Add the diced chili peppers. Fry until soft and fragrant. This step builds the flavor base.
Next, cut the eggplant into small cubes. Add them to the pot. Then grate the tomatoes directly on top of the mixture. Grilling breaks down tomatoes faster than chopping.
Cover the pot. Cook for 10 minutes. Eggplants should be soft. The tomatoes need to release their juice. The chili peppers must be mixed.

Open the lid. The mixture should become very thick. Mix well.
Break the egg in the middle.
Stir continuously for 2 minutes. Never cook eggs in sauce. Mix into the vegetable mixture. This creates a creamy texture that holds everything together.
Service
This dish is very versatile. It can be eaten hot straight from the pot. The eggs stay soft. The vegetables are warm.
You can also let it cool. The flavors will meld even more if you let them. Eggplant is soft. If you like the texture, add paprika for a little crunch.
